PALEO VEGAN BLUEBERRY BANANA MUFFINS
With just some simple ingredients these paleo vegan blueberry banana muffins could not be easier to make. They’re gluten free, dairy free, egg free, and refined sugar free using only the natural sweetness from bananas, making them paleo and vegan friendly and above all, delicious! Whenever I buy bananas I know that I will never eat them all before they get too ripe. I like to eat bananas when they’re on the unripe to ripe end of the scale rather than over ripe, soft and mushy. So with every bunch of bananas I buy I know I’ll end up baking with them. Not that that’s a bad thing as who doesn’t love to eat cake? But it does add a bit of pressure to get into the kitchen to knock something up, and typical me will always want to come up with a new recipe.
The creation of these delicious blueberry banana muffins came about exactly because of this reason. I was going on holiday and needed to clear my kitchen of fresh food before I left and the only things I had left to eat were 3 bananas and a punnet of blueberries. Before I go on holiday I will typically bake myself a little travelling treat in case I can’t get any gluten free treats while I’m away. For this trip I decided that I wouldn’t have time to bake and that I could survive a few days without cake, but this bunch of ripening bananas was putting the pressure on me. I didn’t want to eat them and certainly didn’t want them to go to waste. I was sure that I could knock up something really quickly with minimal fuss.
And that’s exactly what I did. If anyone ever says that gluten free or vegan baking is difficult or doesn’t taste as good as the ‘real’ thing, these blueberry banana muffins will prove them all wrong. There are no fancy ingredients or fussiness. All you really need are bananas, almond flour, a non-dairy milk and some coconut oil, and you’ve got yourself a basic paleo and vegan muffin mix. It’s so simple it’s fool proof not to mention versatile. Don’t have blueberries? Swap them out for chocolate chips or raspberries, or throw in some nuts with a dash of cinnamon. These super delicious muffins are packed with good fats and only naturally occurring sugars making these muffins probably the healthiest muffins in the world. Probably.

INGREDIENTS
1 ¼ cup Almond Flour
¼ tsp. Baking Powder
Pinch of salt
3 Bananas
¼ cup Almond Milk
2 tbps. Coconut Oil, melted
¼ cup Fresh Blueberries
DIRECTIONS:
Preheat the oven to 170°C
Combine the dry ingredients together in a small bowl
In a large mixing bowl mash the bananas until smooth
Add the almond milk and coconut oil
Mix in the dry ingredients until fully combined and then add the blueberries
Spoon the batter into a lined muffin tin and bake for 25-30 minutes
Voila - PALEO VEGAN BLUEBERRY BANANA MUFFINS - unbelievably easy to make and incredibly tasty.
